This is a great way to prepare halibut, cod, sea bass, or salmon. Serve it with Couscous or rice.
- 1 Tsp Vegetable Oil 5ml
- 2 Shallots or
1 small Onion, finely chopped
- 2 Cloves Garlic
- 1 Tbsp Black Bean sauce 15ml
- Â½ cup Rice wine 125ml
- 1 Tbsp Soy sauce 15ml
- 1 Tbsp Rice or Cider vinegar 15ml
- 6 Halibut Fillets, skin removed, 4 ounces/125 grams 1 inch/2.5cm thick
- 1 Tsp Sesame Oil
- Â¼ Tsp Pepper 1ml
- 2 Tbsp Fresh Cilantro or Parsley, chopped 25ml
To make sauce, heat oil in non-stick saucepan. Add shallots and garlic and cook gently until fragrant but not brown.
Add black bean sauce, rice wine, and soy sauce. Bring to boil and cook until reduced by half. Add vinegar. Reserve.
Pat fish dry. Rub with sesame oil and sprinkle with pepper.
Grill fish for about 5 minutes per side, or just until cooked through. Sprinkle with parsley. Serve with sauce poured over the top.
