Recipe for Chicken Basque

This recipe comes to me from my friend Georgia. It is a complete meal in one pot. The sun-dried tomatoes and chorizo sausage give it an extra tang. It can also be made from either boneless, skinless chicken breasts or thighs. I happen to love the taste of chicken thighs.

METHOD for Chicken Basque

Season chicken with salt and pepper, slice red peppers in half and remove seeds and pith. Cut each half into 6 slices. Peel onion slice into strips. Drain sun-dried tomatoes wipe dry with paper towels and cut into ½ inch pieces. Heat 2 tablespoons oil in casserole and add chicken two or three pieces at a time. Brown. Remove to paper towel on plate. Add more oil, heat higher than medium, add onions and peppers. Brown about 5 minutes Add garlic, chorizo and dried tomatoes and toss for about 1 to 2 minutes. Garlic should be pale golden. Stir in rice and when coated with oil, add stock wine, tomato paste and paprika. Reach simmer turn down simmer, add seasoning and place chicken on top. Keep rice down in the liquid. Sprinkle with herbs. Scatter olives and orange over. Cover and cook over gentlest possible heat, 50 minutes or until rice is cooked or bake 300º for 1 hour.
