Halibut with Black Butter

Recipe for Halibut with Black Butter

I love halibut. This recipe for halibut with black butter is a bit misleading as the butter is not really black. The butter should be just a light brown and once swirled with the lemon juice is not black at all. This butter sauce is also nice if poured over chicken tenders.

INGREDIENTS for Halibut with Black Butter

  • 1 ½ lb. (750 g) Pacific Halibut Steaks cut approx. 1 inch (2.5 cm) thick
  • Flour
  • Salt and Pepper
  • 1/3 cup (75mL) Butter
  • 1 tbsp. (15mL) Lemon Juice
  • 2 tbsp. (25mL) chopped fresh Parsley

METHOD for Halibut with Black Butter

Lightly coat halibut with flour seasoned with salt and pepper. In heavy skillet, melt 2 tbsp. (25mL) of the butter. Add halibut and sauté over medium-high heat about 5 minutes on each side or until fish is opaque and flakes when fork-tested. Remove halibut to heated platter or serving plates. Add remaining butter to skillet; heat until butter turns light brown. Immediately remove skillet from heat; stir in lemon juice and parsley; pour over halibut and serve. Serves 4.
