Recipe for Salmon Buffet Salad

This recipe for Salmon Buffet Salad is another great dish to be served for a Ladies lunch party. As in the recipe for Fonduloha I am not keen on all this mayonnaise. For my own taste *I like to blend just ½ cup of the mayonnaise to 2 cups of yogurt then just add enough to have everything stick together. For the Macaroni I prefer a tricolored rotini noodle. Interestingly rotini does not exist in Italy.

INGREDIENTS for Salmon Buffet Salad

  • *2 ½ cups Mayonnaise
  • 1 tbsp. Salt
  • 1 ½ tsp. Pepper
  • 6 cans (1 lb. each) Red Salmon, drained
  • 24 oz. Macaroni, cooked, drained, and cooled
  • 6 cups diced pared Cucumber
  • ½ cup grated Onion
  • ½ cup minced Parsley
  • crisp Salad Greens

METHOD for Salmon Buffet Salad

Blend mayonnaise, salt, and pepper. Toss with remaining ingredients except salad greens. Chill well. Serve on crisp salad greens; garnish with lemon wedges, additional minced parsley, and paprika, if desired. 24 servings (1 cup per portion).
