Recipe for Turkey Meatloaf with Winter Fruits

Any cold winter evening is a great time to offer the family a warm and cozy, home cooked meatloaf.  It just so happens that this meatloaf is made of turkey, with apples, cranberries, pecans, and crunchy croutons tossed in – it is a wintertime favorite with my family!

Ingredients for Turkey Meatloaf with Winter Fruits:

  • 2 pounds freshly ground turkey meat.
  • 1 medium onion, diced
  • 1 tbsp. canola oil (ground turkey is low in fat)
  • 1 egg
  • 1/4 cup oats (quick)
  • 1/4 cup heavy cream
  • 1/2 tbsp. seasoned salt
  • 1-1/2 cups packaged croutons
  • 1/2 cup diced dried cranberries
  • 4 pieces diced dried apple slices
  • 2 tbsp. rough chopped pecans
  • 1/4 cup turkey stock or chicken broth

Directions for Turkey Meatloaf with Winter Fruits:

  1. Add ingredients to a bowl large enough to mix easily. Using your hands, mix all ingredients totally together, and then refrigerate 20-30 minutes.
  2. Preheat oven to 350oF.
  3. Remove mixture from the refrigerator and place it into a loaf pan which has been sprayed with non-stick cooking spray.
  4. Press the mixture into the pan, leave a flat top.  Cover with aluminum foil. Bake 30 minutes. Then remove foil for the last 10 minutes so the top can brown.
  5. Remove oven and let sit for 10 minutes, drain off any access oils. Slice the turkey loaf into 2 inch pieces, serve with natural juices or make a thin sauce using the drippings.
