Recipe for Spinach Quiche on a Cloud

Here is a quiche recipe that can be a great breakfast, but make it for lunch or supper, your family will love it as much as mine does – I’m sure of it!

It’s a fun recipe because the over-hanging puff pastry dough makes a big cloud-like crust.

Ingredients forSpinach Quiche on a Cloud:

  • Store-Bought puff-pastry sheet
  • 2 cups fresh spinach
  • 6 tbsp. water
  • 1 tsp. nutmeg
  • 4 tbsp. sour cream
  • 6 large eggs, beaten
  • 1 cup cottage cheese
  • 2/3 cup Swiss cheese
  • 1/2 cup Cheddar cheese
  • 1 onion, minced
  • 2 tbsp. butter
  • 1 large tomato, sliced
  • 2 tsp. salt
  • 2 tsp. black pepper

Directions for Spinach Quiche on a Cloud:

Set oven at 400oF. Spray 9-inch pie plate with cooking spray.

  • Position the puff-pastry sheet over the pan, push onto the bottom of the pan and up      the sides, do not t rim dough
  • Par-bake the shell 10 minutes. Remove from oven and reduce temperature to 350oF.
  • In a skillet sauté over medium heat and add butter and onion. Cook until soft then pour in bowl and reserve
  • In the same pan over medium-high heat, add the 4 tbsp. water and the spinach. Cook until  wilted, add nutmeg and stir, remove from heat, and reserve
  • Beat eggs in a large bowl, add sour cream, cheeses, and cottage cheese; stir
  • Pour into par-baked puff-pastry shell and lay tomatoes over top
  • Bake 55-60 minutes in your preheated oven and until a knife inserted into the filling comes out clean
