Recipe for Chicken & Asparagus Pasta Alfredo

Here is a recipe that comes together quickly and has the potential to be a family favorite, if you serve it– they will come!

I buy a rotisserie chicken from the store, frozen asparagus, and then choose literally ANY form of pasta.  Now Alfredo sauce is one of the easiest sauces to make so, do not buy it in a jar… make it while the pasta cooks, really!

Ingredients for Chicken & Asparagus Pasta Alfredo:

  • 2 cups rotisserie chicken, boned and cut into bite size chunks, keep hot in the oven
  • 1-16 oz. package frozen asparagus spears or use fresh
  • 2 tbsp. olive oil
  • 1 small onion, diced
  • 2 cloves fresh garlic, crushed and minced
  • 2 tsp. sea salt
  • 2 tsp. crushed black pepper
  • 2 cups cooked pasta any size or shape such as Fettuccine, Angel Hair, or Rigatoni)
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • ¼ cup white wine (Optional)

Directions for Chicken & Asparagus Pasta Alfredo:

  1. Debone chicken, cut into small chunks and place in a large oven-proof bowl, cover with foil and keep warm in a 250oF. oven.
  2. Pour 2 quarts water into a pasta cooker (with sleeve in) place over high heat, add 2 tbsp. sea salt and bring to a boil. When the water is boiling add dry pasta and boil, covered until pasta reaches desired level of doneness.
  3. Drop asparagus into the pasta water, replace lid on pasta cooker and make the sauce.
  4. While pasta cooks make the sauce; add olive oil to a medium sized sauce pan, place over medium high heat and add diced onion, sauté until opaque.  Add minced garlic and cook one minute, then add cream and bring to a boil but do not boil.  When the sauce begins to boil remove from heat, stir in the parmesan cheese. Stir well and reserve momentarily.
  5. Strain pasta and asparagus together, toss into a large pasta dish, immediately pour reserved Alfredo sauce over pasta/asparagus, add the hot chicken chunks, then toss lightly to cover all – and that is it.

This quick and easy meal lends itself quite willingly to being served with a nice slice (or two) of crunchy garlic toast and then heap more Parmesan cheese over the whole dish as it is served.
