Chicken Bites

Recipe for HOT CHICKEN BITES

These Hot Chicken Bites are a great little nibble before dinner or as part of a larger appetizer selection. We sometimes add a little dip of honey and mustard to this recipe.

INGREDIENTS for Hot Chicken Bites:

  • 2 Tbsp. Butter
  • 2 Tbsp. Flour
  • ¾ cup Milk
  • 1 Egg Yolk
  • 1 Tsp. Dijon Mustard
  • ½ Tsp. Angostura Bitters (optional)
  • ¾ Tsp. Salt
  • 1/8 Tsp. Pepper
  • 2 cups finely ground cooked Chicken
  • 1 Egg White
  • ½ cup ground blanched Almonds
  • ½ cup grated Parmesan Cheese
  • 2 Tbsp. Butter (approx.)

METHOD for Hot Chicken Bites:

Melt 2 Tbsp. butter in medium saucepan. Add flour and stir to blend. Remove from heat and add milk all at once. Stir to blend, return to moderate heat and cook, stirring, until boiling, thickened and smooth. Beat egg yolk lightly with a fork and stir a little of hot mixture into it gradually. Return mixture to heat and bring back to a boil, stirring. Remove from heat. Stir in mustard, Angostura bitters, salt, pepper and chicken.

Spread mixture on a cookie sheet or large shallow baking pan, and chill very well until firm enough to handle easily. Shape the mixture into flat round cakes about 1 inch in diameter and ½ – inch thick.

Heat 2 Tbsp. butter in heavy skillet and fry the little cakes over moderate heat until golden and very hot. Add more butter to the skillet as needed. (Makes about 32.)
