There can never be enough recipes for green beans. This recipe for Stir-fried Garlic Beans is great at Christmas time. The red pepper with the green beans adds the right color to the turkey dinner. The nuts can be optional if there are nut allergies.

Ingredients for Stir-fried Garlic Beans:

  • 2 lbs. (1 kg) green beans
  • 1 red pepper, seeded
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. butter
  • 2 garlic cloves, crushed
  • Generous pinch of salt
  • Freshly ground black pepper
  • ½ tsp vegetable oil
  • ¼ cup coarsely chopped almonds, peanuts or cashews

METHOD for Stir-fried Garlic Beans:

Clean and trim green beans. Slice red pepper into thin ¼ – inch strips. Heat ½ tablespoons oil in a large frying pan set over medium heat. Add half of butter and 1 garlic clove and cook for 30 seconds. Add half of beans and red pepper strips and sauté, stirring often, 10 minutes. Toss with salt and pepper. Transfer to a platter. Sauté remaining garlic, beans and red pepper following same method. Toss with salt and pepper and remove to platter.
Add ½ teaspoon oil and nuts to pan and stir gently for 2 to 3 minutes, until golden. Spoon over beans.
Preparation time: 10 minutes
Cooking time: 24 minutes
Makes: 10 to 12 servings
