Broccoli is a staple in my household. Gingered broccoli is a great variation on how to prepare it. As broccoli is considered to be the healthiest vegetable we try to have it in some form several times a week. My husband is a reluctant eater of broccoli so I look for interesting ways to spruce it up and this gingered broccoli is a great way to do this.

Ingredients for Gingered Broccoli

  • 2 bunches broccoli
  • 1 – Inch piece fresh ginger
  • ¼ cup peanut oil
  • Salt and freshly ground black pepper

METHOD for Gingered Broccoli:

Cut broccoli into small flowerets. Peel stalks and slice diagonally, ¼ inch thick. Cut 4 (1/4 – inch – thick) slices from thickest part of ginger.
Heat oil and ginger in a large deep frying pan set over medium heat. Add broccoli and sauté, stirring often, about 8 to 9 minutes or until cooked as you like. If necessary, cook broccoli in 2 batches, using half of oil and ginger for each batch.
Remove ginger and sprinkle broccoli with salt and pepper. Serve immediately.
Preparation time: 10 minutes
Cooking time: 8 minutes
Makes: 8 to 10 servings
