Pine Nut Rice

This is a great accompanying dish for a variety of meals. This recipe for Pine Nut rice came to me from Carolyn Williamson with the recipe for Country Captain Chicken. I love the nutty taste of this dish.

  • ½ cup Olive Oil
  • 1 cup finely chopped Onion
  • ½ cup Pine Nuts or Slivered Blanched Almonds
  • 1 ½ Tsp or more, Paprika (rice should be orange)
  • ½ Tsp Tabasco
  • 4 cups hot, cooked Rice
  • Salt and Pepper
  • 3 Tbsp chopped Parsley
  • 2 or 3 Pimentos

Saut̩ onion, pine nuts, paprika, and Tabasco in butter or olive oil, for 4-5 minutes. Add rice and blend well. Toss with two forks to keep the rice light. Arrange rice on platter, sprinkle with chopped parsley Рarrange chicken around rice. Serves 4 Р6
