Recipe for DRESSED – UP SAUSAGE

For a change of pace with this recipe for DRESSED – UP SAUSAGE, make sausage a company special. The French call this a “gougère”, the English, “toad – in – the – hole” or Yorkshire sausage, in New England it’s referred to as “sausage pudding”. Whichever, it’s a very nice way to present sausages to guests.

Ingredients for DRESSED – UP SAUSAGE:

1 lb. Pork Sausages or 1 cup diced pork fat
¾ cup All Purpose Flour
1/3 Tsp Salt
½ Tsp Baking Powder
¾ cup Milk
2 Eggs

Method for DRESSED – UP SAUSAGE:

Brown sausages in a lightly greased frying pan for 10 minutes or fry pork fat until pieces are crisped. Sift dry ingredients, add milk and beat into a smooth batter. Add eggs and beat again. Pour over sausages or fat, and then bake in a 450 degrees oven for 20 minutes. Serve with creamed onions or corn. Serves 4 – 5.
