Chicken Chow Mein Recipe
I have had this Chicken Chow Mein recipe for years and years. It is nice for chicken but I mostly use it with the left over holiday turkey . For variety you can add carrots, peas, peppers, broccoli or canned peaches or apricots to it. Serve it with rice or hot noodles.
- 2 pounds cooked Chicken or Turkey, diced
- 2 Tbsp Vegetable Oil
- 3 Tbsp Soya Sauce
- 1 OXO Chicken cube
- 1 cup boiling Water
- 1 large bunch Celery, chopped
- 1 large Onion
- 2 TBSP Cornstarch
- Â¼ cup Water
- 1 – 10 ounce can Water Chestnuts, sliced
- 1 – 20 ounce can Bean Sprouts*
- 1 – 10 ounce can Mushrooms
- salt, pepper to taste
Brown chicken or turkey in hot oil. Dissolve Oxo cube in boiling water; add soya sauce. Stir in into chicken. Add celery and onion. Cover and simmer 1 1/2 hours. Blend cornstarch with 1/4 cup water; stir into chicken mixture. Add drained chestnuts, bean sprouts, and mushrooms. Heat.
*Can substitute fresh bean sprouts if available.
