Chicken Chow Mein Recipe

Chicken Chow Mein
I have had this Chicken Chow Mein recipe for years and years. It is nice for chicken but I mostly use it with the left over holiday turkey. For variety you can add carrots, peas, peppers, broccoli or canned peaches or apricots to it. Serve it with rice or hot noodles.

  • 2 pounds cooked Chicken or Turkey, diced
  • 2 Tbsp Vegetable Oil
  • 3 Tbsp Soya Sauce
  • 1 OXO Chicken cube
  • 1 cup boiling Water
  • 1 large bunch Celery, chopped
  • 1 large Onion
  • 2 TBSP Cornstarch
  • ¼ cup Water
  • 1 – 10 ounce can Water Chestnuts, sliced
  • 1 – 20 ounce can Bean Sprouts*
  • 1 – 10 ounce can Mushrooms
  • salt, pepper to taste

Brown chicken or turkey in hot oil. Dissolve Oxo cube in boiling water; add soya sauce. Stir in into chicken. Add celery and onion. Cover and simmer 1 1/2 hours. Blend cornstarch with 1/4 cup water; stir into chicken mixture. Add drained chestnuts, bean sprouts, and mushrooms. Heat.
Serves 6
*Can substitute fresh bean sprouts if available.
