Mango Salsa in Phyllo Tarts

Mango Salsa in Phyllo Tarts
This Mango Salsa is one of the suggestions that my friend Georgia gave me to fill up the Mini Phyllo tarts. It has a great taste. The secret here is to fill the Phyllo tarts at the last minute to prevent them from getting soggy.

  • 1 Mango peeled and finely diced
  • ½ cup Red Onion, finely diced
  • ½ cup Sweet Green Pepper
  • 2 Tbsp Fresh Lemon or Lime Juice
  • 2 Tbsp Fresh Coriander or Cilantro and/or Mint finely chopped
  • ¼ Tsp Ground Pepper
  • ¼ Tsp Pepper
  • 30 Mini Phyllo Tarts

Combine everything. Spoon into tart shells and serve immediately. Mango Salsa may be made the day before.
