Stir Fried Snow Peas with Chinese Mushrooms and Waterchestnuts
Stir Fried Snow Peas with Chinese Mushrooms and Waterchestnuts is the first recipe in session six of Marion’s Chinese cooking course.

  • 6 Dried Mushrooms
  • 1 pound Fresh snow Peas
  • ½ cup Waterchestnuts
  • 1 Tsp Salt
  • ½ Tsp Sugar
  • 1 Tsp Soya Sauce
  • 2 Tbsp Oil

Do Ahead:

Soak mushrooms in warm water, drain, and cut off tough stems. Cut caps into quarters.
Remove stems and tough strings from peas. Cut waterchestnuts into ¼ inch circles.

To Cook:

Heat oil in pan or wok until hot. Add salt then saut̩ mushrooms and waterchestnuts. Sprinkle on sugar and soya sauce and add snow peas. Stir fry, tossing constantly, until liquid evaporates Рabout 2 minutes. Transfer to hot plate.
