Broccoli With Oyster Sauce
Broccoli With Oyster Sauce is the first recipe in session five of Marion’s Chinese cooking course.

  • 1 bunch Broccoli
  • 2 Tbsp Oil
  • 2 Tbsp Sherry
  • 2 Tbsp Oyster Sauce
  • 1 Tsp Sugar
  • 1 Tsp Salt
  • ½ cup Chicken Broth
  • 1 Tbsp Cornstarch

Peel off Tough outer shins o f broccoli and slice on the bias. Cut flowers into 1 inch long pieces. Open up the ends of the flowers with an X. Heat oil in pan. Put in salt, then vegetables and stir-fry for a few seconds. Add sugar, broth, and sherry. Cover till steamed through. Open lid* and add oyster sauce then stir well. Serve on a warm platter or dish.

*Once you remove the lid when steaming a green vegetable do not put it on again. This will cause the vegetables to loose their nice green color.
