Cantonese Shrimp Marion’s Chinese Cooking Course Recipe #8

Cantonese Shrimp
Cantonese Shrimp is the first recipe in session four of Marion’s Chinese cooking course.

Main Ingredients:

  • ½ cup Ground Pork
  • 1 pound Shrimp
  • 1 Tsp Salted Black Beans, mashed
  • 2 Cloves Garlic, chopped
  • 3 Tbsp Oil
  • 1 cup Chicken Broth
  • 2 Eggs beaten
  • 1 Tsp Ginger, ground
  • 1 Tsp Sesame Oil

Seasonings:

  • 1 Tbsp Sherry
  • 1 Tbsp Soya Sauce
  • ½ Tsp Sugar
  • 3 Scallions,chopped
  • ¼ Tsp Pepper
  • Salt to taste

Thickening:

  • 1 Tbsp Cornstarch
  • ½ cup Water

Do Ahead:

Marinate shrimp with sherry, soya sauce, sugar, pepper, and salt for a few minutes. Chop garlic; then rinse and mash black beans.

Cook:

Sauté garlic, black beans, ginger, and scallions in hot oil very briefly. Add pork and stir till pink color is gone. Add shrimp, stir constantly. Add chicken broth and a little more soya sauce. Cook another minute. Add beaten eggs and thickening. Remove from heat. Pour on sesame oil. Toss and serve hot.
