Peppered Pork in Sesame Seed
Peppered Pork in Sesame Seed is the second recipe in session two of Marion’s Chinese cooking course.

  • 1 pound Pork, lean
  • 2 Egg Whites
  • 3 Tbsp Sherry
  • 1 Tbsp Salt
  • 1 cup Oil
  • 1 Tsp Sugar
  • 3 Scallions, finely chopped
  • 3 slices Ginger
  • ½ cup Cornstarch
  • 1 Tbsp White Pepper
  • Sesame seeds

Do Ahead:

Slice Pork into pieces 3 inches long by 1/8 inch thick. Pound lightly. Mix ginger, scallions, sherry, sugar, and salt with pork slices for ½ hour.

Assmeble:

Combine egg white, cornstarch, and pepper, and stir until a paste is formed. Put pork slices into this mixture and mix well. Take out pork pieces, one at a time, and coat with sesame seeds. Fry in hot oil till golden brown.

*Chicken could be substituted.
