Shrimp Toast Marion’s Chinese Cooking Course Recipe #4

Shrimp Toast Chinese Cooking

The Shrimp Toast was the the first recipe in the second class of Marion’s Chinese cooking course. It is often served with soup.

    • 1 pound Shrimp
    • 2 Tbsp Scallions, chopped
    • 2 Egg Whites
    • 6 – 7 slices Stale Bread
    • ½ Tsp ground Ginger
    • 2 Tsp Sherry
    • ½ Tsp Accent
    • ¼ Tsp Pepper
    • Salt to taste
    • Oil for frying

Shell and clean shrimp (or buy the already cleaned shrimp) then dry the shrimp. Chop the shrimp coarsely. Mix together shrimps, scallions, egg whites, and seasonings. Stir mixture vigorously for a few minutes. Spread bread slices with shrimp mixture. Fry in deep fat until golden brown.

Drain and serve.
