I have this recipe on a wee scrap of paper with absolutely no instructions – just ingredients. It is a lovely soup to make when the weather is warm and the strawberries are plentiful. It has a wonderful color.
- 2 cups Strawberries – puree
- ¼ cup Sugar
- ½ cup Yogurt (Or Sour Cream)
- 2 cups Ice Water
- ½ cup dry Red wine
Mix all together and stir until sugar is dissolved. Chill well. When you serve it you can put a small dollop of yogurt on top and place a mint leaf on the yogurt. If you have some clear crystal goblets they make a very nice serving dish for it.
Perfect for summer!
