Lentil and Fruit Soup

Use Up Your Ham Bone -Lentil Soup

I am not sure from where this recipe has come. If I had to guess I would say my friend Georgia. At one time I was looking for recipes to use up left over ham and I think this may be part of that search.

  • ½ cup soaked Lentils
  • 1 Ham Bone (optional)
  • 1 Onion quartered
  • 2 Carrots quartered
  • 1 Clove Garlic
  • ½ Tsp Salt
  • 2 cups Water

Place the lentils in a saucepan and cover with 2 cups of cold water. Add all the ingredients bring to a boil. Cover and simmer for 25 minutes. Discard the bone and add the following:

  • 2 Potatoes cubed
  • 1 Tsp Black Pepper
  • ½ cup dried Apricots
  • ½ cup dried Prunes
  • 1/3 cup Walnuts chopped
  • 1 Tbsp Butter
  • 1 Tbsp Oil
  • Chopped Parsley

Heat the oil and butter in a skillet. Sauté the potatoes with the black pepper. Add to the soup. Roughly chop the fruit and walnuts by hand or better still in the small bowl of the processor. Add these to the soup. Simmer for 5 to 10 minutes. Dilute if necessary with 1 cup of cranberry juice or water. Serve sprinkled with parsley.
