Golden Pumpkin Soup

I have no idea where I might have acquired this recipe. The soup is lovely. It has a great color and is very smooth. Perfect for a Thanksgiving feast.

  • 3 Green Onions, finely chopped
  • 2 Tbsp Butter
  • 1 cup Grated Carrot
  • 1 Tsp Ground Cumin
  • 2 cups cooked Pumpkin or 1 can
  • 1 can Creamed Corn
  • ½ Tsp Salt
  • Freshly Ground Pepper
  • 3 cups Water, Stock, or Apple Juice

Melt the butter in a saucepan and put in the carrot, corn, and pumpkin. Stir in the remaining ingredients and simmer for 8 to 10 minutes.

Serve garnished with chopped green onions and croutons.
