Mediterranean Kabobs Recipe

This Mediterranean Kabobs recipe gives lamb a great taste. In the summer we like to have kabobs as part of our meal rotation and it is nice to find a good recipe for lamb kabobs. Beside the tasty marinate I like the tip to soak the mushrooms in hot water before trying to thread them on the skewers. Many times I have broken the mushrooms when putting them on skewers but softening them really helps.

Ingredients for Mediterranean Kabobs

  • 1 cup Rosé Wine*
  • ½ cup Orange Juice
  • ½ cup Onion finely chopped
  • ¼ cup Chili Sauce
  • ¼ cup Cooking Oil
  • 1 clove Garlic minced
  • 1 Tbsp packed Brown Sugar
  • 1 Tsp Dried Oregano crushed
  • 1 Tsp Salt
  • ¼ Tsp Pepper
  • 2 lbs Boneless Lamb cut in 2-inch cubes
  • 12 Mushrooms whole
  • 2 Green Peppers cut in 11/2-inch squares

Method for Mediterranean Kabobs

Combine wine, orange juice, onion, chili sauce, oil, garlic, brown sugar, oregano, salt, and pepper. Pour over lamb in bowl. Cover. Marinate for 2 hours at room temperature or overnight in refrigerator.
Drain, reserving marinade.
Pour boiling water over mushrooms; let stand 2 minutes.
Thread meat and vegetables alternately on skewers.
Broil 4 to 6 inches over medium heat for 25 to 30 minutes. Turn frequently and brush with marinate.
Serves 6.
*If you don’t have Rosé Wine any Red Wine will work
