Mock Cheesecake Recipe

This Mock Cheesecake recipe is easy to make. It is the type of thing that you can make two at a time and have one in your freezer for unexpected company. I found this in an old cookbook that I use frequently – Betty Crocker’s Hostess Cookbook


  • 11/4 cups Graham Cracker Crumbs
  • 2 Tbsp Sugar
  • ΒΌ up Butter or margarine, melted
  • 1 can Lemon satin ready-to-spread Icing
  • 1 cup Creamed small curd Cottage Cheese
  • 1 cup Dairy Sour Cream


Heat oven to 350. Mix graham crackers crumbs and sugar in bowl. Add butter; mix thoroughly. Reserve 3 tablespoon for topping. Press remaining mixture firmly and evenly on bottom of square pan 9x9x2 inches. Bake 10 minutes. Cool.
In small mixer bowl, combine frosting, cottage cheese, and sour cream. Beat on high speed until blended, about 1 minute. Pour into crumb-lined pan; sprinkle with reserved crumbs.
Freeze overnight.
If desired, garnish with strawberries, peaches, blueberries, or other fruit.
Serves 9 to 12
