Grilled Shrimp With Citrus Sauce Recipe

I recently found this Grilled Shrimp With Citrus Sauce recipe in some papers from a holiday to Florida. I have been scratching my head trying to remember where I acquired it. It is all in my handwriting so I am sure it is not from the Internet. I am thinking it must have come from a friend. We were unable to grill where we were staying so I know we didn’t make it while in Florida. Having unearthed it I will definitely feed it into our menu planning.

Ingedients

1Lb Shrimp or more

Marinade

  • ½ cup Vegetable Oil
  • Grated zest of 1 Orange
  • Grated zest of 1 Lime
  • 1 Tbsp Fresh Basil minced
    or 1/2 Tbsp dried Basil
  • 1 Tsp Fresh Thyme minced
    or ½ Tsp dried Thyme

Vegetable Sauté

  • 1 Tbsp Vegetable oil
  • 3 cups Vegetables – artichokes, fennel, red pepper, zucchini, or your favorites, cut into ½ inch thick sticks 2 inches long
  • 1 clove Garlic minced
  • Salt and Pepper to taste
  • 3 Tbsp Balsamic vinegar

Citrus Sauce

  • 1 Tbsp Orange juice
  • 1 Tbsp Grapefruit juice
  • 1 Tbsp Lime juice
  • 2 Tbsp Honey
  • 1 Tbsp Dijon mustard

Method

Combine all the marinade ingredients. Add the shrimp. Marinade for a least 3 hours.

Make vegetable sauté. Sauté for 4 minutes. Add seasoning, salt and pepper. Add Balsamic vinegar. Sauté for 1 minute more.

Make citrus vinaigrette. Combine all. Whisk to dissolve the honey.

Remove shrimp from marinade. Grill for 2 minutes per side.

Serve vegetables. Put shrimp on top and pour on citrus vinaigrette.
