I discovered this Pear and Avocado Salad recipe at Christmas time and used red pomegranate seeds in it. In the area that we live pomegranates are seasonal so when I wished to make it later in the year I used blueberries. I think you could also use strawberries. When I assembled it I used half the quantity of dressing and still thought maybe it was a bit much, so I advise adding the dressing a little at a time.

Ingredients for Pear and Avocado Salad

  • 1 head Romaine Lettuce washed and torn into bite sizes
  • 1 ripe Pear cored and diced
  • 1 Avocado peeled, pitted and diced
  • 2/3 cup Pecans or Walnuts
  • 1 small package Goat’s Cheese crumbled
  • ½ cup diced Red Onion
  • 1 cup Blueberries*

Dressing for Pear and Avocado Salad

  • ¼cup freshly squeezed Lime Juice
  • 11/2 TSP Honey
  • 2 TSP White Sugar
  • 1 TBSP Dijon Mustard
  • 1 TSP fresh chopped Garlic
  • 1 TBSP Red Wine Vinegar
  • A pinch of Salt
  • A pinch of Black Pepper
  • ½ cup Olive Oil

Assembly for Pear and Avocado Salad

Mix together all but Olive Oil whisk well then slowly add Olive Oil. Add the dressing a little at a time until you have the amount you would like. For my taste you need less than half this quantity but you might like more.

*I first made this at Christmas and used seeds from a Pomegranate rather than the blueberries.
