Mediterranean Pork Stir-Fry

Recipe for Mediterranean Pork Stir-Fry

In the family I grew up in we did not have stir-fry meals. As a result I am always on the look for recipes for this type of cooking. This Mediterranean Pork Stir-Fry recipe is a great way to combine fresh vegetables with a small amount of meat. If you have fresh herbs you may substitute them for the dried ones here. Because the dried ones are more potent use about three times the amount of fresh ones.

Ingredients for Mediterranean Pork Stir-Fry

  • 3 TBSP Olive Oil (divided) 45ml
    1 LB Pork lean, boneless, cut in strips
    1 Onion medium cut in thin wedges
    1 Carrot large sliced thin
    2 Zucchini small sliced
    1 Green Pepper cut in strips
    10 -12 Mushrooms large sliced
    2 Garlic Cloves chopped fine
    ½ TSP Basil dried 2 ml
    ½ TSP Thyme dried 2ml
    2 Tomatoes cut in wedges
    Salt and pepper to taste
    Parmesan cheese grated

Method for Mediterranean Pork Stir-Fry

In a wok or large fry pan heat 2TBSP oil (30ml) oil over high heat. Stir-fry pork about two to three minutes or until meat changes color. Remove to wrm bowl with slotted spoon.
In the same pan, heat remaining 1TBSP oil (45ml); stir fry onion and carrot for two minutes. Add zucchini, pepper, mushrooms, garlic, basil, and thyme; stir-fry for one minute. Sprinkle with 2TSP water (10ml). Cover; turn heat to low and let vegetables steam for 1½ minutes. Stir in tomatoes, salt and pepper. Increase heat; add pork and heat through. Sprinkle with parmesan cheese.
Makes 6 servings.


Like most stir fry recipes you can add or change the vegetables. Snow peas, asparagus, broccoli, green beans, or some squashes are great additions.
