I think that Cornish hens are a great choice for entertaining. This recipe for Cornish hens with orange sauce is perfect for any special occasion.
I have had some Cornish hens that were quite fat so I suggest checking the cavities and removing any extra fat. I also think cooking them on a rack might be a good idea.
I love the taste of the orange in this version of Cornish hens.

Ingredients for Cornish Hens With Orange Sauce

  • 1 8oz (227ml) Can frozen orange juice
    ¼ cup (60ml) Water
    5 Garlic cloves crushed
    2 Tbsp (30ml) Fresh chopped ginger
    Salt and pepper to taste
    4 Cornish hens
    4 Oranges

Method for Cornish Hens With Orange Sauce

Mix first four ingredients. Wash hens and dry well. Place the hens in an ovenproof shallow casserole and pour marinade over top. Marinate over night. Turn occasionally.
Preheat oven to 350F (180C). Sprinkle the hens with salt and pepper. Stuff the cavity with half of an orange. Bake for 1 hour.
Place on serving dish. Remove oranges. Garnish with twisted orange slices. Serve with the sauce.
Note: Depending on the size of the hens you may wish to cut them in half before serving.
