Stir-Fried Chicken With Broccoli

Recipe for Stir-Fried Chicken With Broccoli

1 lb Boneless chicken breast, skinned and sliced thin 500grams

Marinade for Stir-Fried Chicken With Broccoli

  • 1 TBSP soya sauce 15ml
    1 TBSP Cornstarch 15ml
    1 TSP Sugar 5ml
    1 TBSP Water 15ml
    1 TBSP Vegetable Oil 15ml

Vegetable Mixture for Stir-Fried Chicken With Broccoli

  • 3 TBSP Vegetable Oil 45ml
    1 Medium Carrot peeled and sliced thin
    1 lb Broccoli flowerets cut into bite-size pieces 500grams
    1 TBSB Fish Sauce 15ml
    ½ TSP Sugar 2ml
    1 Large Garlic clove chopped fine
    ¼ Cup Water 50ml
    11/2 TSP Sesame Oil 7ml
    1 Medium Onion sliced thin
    5 Slices (1/4 inch or 5mm thick) peeled fresh Ginger
    1 TBSP Dry Sherry 15ml
    ½ TSP Freshly ground White Pepper 2ml
    Salt to taste

Method for Marinade

In medium bowl combine all marinade ingredients. Add chicken and let marinade for 15 minutes.

Method for Vegetable Mixture

Heat wok over medium-high heat. Add 1-tablespoon (15ml) vegetable oil. Add carrot and stir-fry for 30 seconds. Add broccoli and stir-fry for 1 minute. Stir in fish sauce, sugar, garlic, and ¼ cup (50ml) water. Cover and cook for 5 minutes or until vegetables are just tender. Add sesame oil and toss to mix. Remove vegetables and keep warm.

Heat wok over medium -high heat. Add remaining 2 tablespoons (30ml) vegetable oil. Add onion and ginger, stir-fry for 15 seconds. Add chicken with marinade, stir-fry for about 1 minute. Stir in sherry and cook an additional 1-minute. Add broccoli mixture and stir-fry for about 1-minute to heat through. Taste and adjust seasonings with white pepper and salt if desired. Serve immediately.
