Recipe for Zesty Beef & Rice

This recipe for Zesty Beef & Rice is from the Heart and Stroke Association. In our family we are grateful not to have heart disease nor had a stroke but I am always looking for heart smart recipes as a precaution. This recipe is quick and easy plus it tastes great.

Ingredients for Zesty Beef & Rice

  • 11/2 TSP Chili Powder 7ml
    ½ TSP Ground Cumin 2ml
    ¼ TSP Garlic Powder 1ml
    1/8 TSP Dried Oregano leaves .5ml
    Dash Cayenne pepper (optional)
    1 Lb Steak – 1-inch (2.5cm) thick 500ml
    top sirloin, strip loin, or tenderloin
    ½ Cup Apple juice 125ml
    1 Cup Rice 250ml
    white, wild, or unseasoned mixture
    ¼ TSP Salt 1ml
    1 TSP butter or margarine 5ml
    2 to 3 Green Onions sliced thinly
    1 Apple cut into pieces
    2 Stalks of celery sliced finely
    ¼ Cup Walnuts coarsely cut (optional)

Method for Zesty Beef & Rice

Combine first 5 ingredients to prepare seasoning mixture. Rub 1 TSP (5ml) of mixture on both sides of steak.
Combine 11/2 Cups of water with apple juice, rice, salt, butter, and rest of seasonings in medium saucepan. Bring to a boil, cover and simmer for 20 minutes.
Combine green onions, cut apple, and celery then set aside.
While rice is cooking grill the steak. It may be cooked in a pan if grilling is not an option.
When rice is done fold in onion/apple/celery mixture. Toss well.
Carve steak in thin slices and arrange over rice mixture. Sprinkle with walnuts. Garnish with lettuce and apple slices.
