Years ago, everyone I knew was trotting out their favorite recipe for gazpacho. I must confess at the time I had no idea what gazpacho was. The dictionary states it is “a soup made of chopped tomatoes, cucumbers, onions, garlic, oil, and vinegar, and served cold.” It apparently originates in Spain.
Peter Gzowski ran a contest on his famous radio show Morningside, asking listners to send in their gazpacho recipes. My husband came home from being on a working raod trip to rave about these recipes. As it turned out we were invited to a friend’s for dinner and she served her version of this great summer soup.
No pressure you understand. It seemed I absolutely had to find my own gazpacho recipes. The following recipe I found in a 1973 Better Homes and Gardens Quick and Easy Recipes. We have had it every summer since that time. We love it!

INGREDIENTS for Blender Gazpacho

METHOD for Blender Gazpacho

Blender Gazpacho [1]Put 1 cup of the tomato juice, the olive or cooking oil, wine vinegar, and garlic in blender container. Blend till garlic is finely chopped.

Add half each of the tomato, cucumber pieces, green pepper, celery, onion, parsley, bread, salt, and pepper to blender container. Blend till vegetables are pureed. Transfer to 2-quart container. Repeat with remaining tomato juice, vegetables, bread, and seasonings. Cover and chill thoroughly in the refrigerator.

Serve in chilled mugs or bowls topped with croutons and cucumber slices. Makes 6 servings.
