For this Cherry-Almond Deep Dish Pie I prefer to use the dark red cherries. They have an outstanding flavor and give the whole pie a more elegant look. The pie can be made with the sour cherries but it is not the same taste or look. In our family we love almonds and the flavor of almonds so this is a favorite pie.

Ingredients for Cherry-Almond Deep Dish Pie

  • Two 20-oz. cans pitted red Cherries
    ½ cup toasted Slivered Almonds
    ½ cup Sugar
    ¼ cup Cornstarch
    1/8 Tsp Salt
    1/8 Tsp Cinnamon
    2 cups Liquid (Cherry Juice plus Water)
    1 Tbsp Butter
    ½ Tsp Almond Extract
    Pastry for 1-crust 9-inch pie
    Light Cream
    Almond Whipped Cream (recipe follows)
    Toasted Slivered Almonds

Method for Cherry-Almond Deep Dish Pie

CHERRY-ALMOND DEEP DISH PIE Heat oven to 425 degrees. Have ready an 8-inch square glass baking dish.

Drain cherries saving juice. Combine cherries and ½ cup almonds and put in baking dish.

Combine sugar, cornstarch, salt and cinnamon in saucepan. Stir in liquid gradually, blending until smooth. Bring to a boil over high heat, stirring constantly. Turn down heat and boil 1 minute. Stir in butter and almond extract. Pour over cherries.

Roll pastry into a square slightly larger than pan and lay on top of fruit. Turn edges of pastry under and press to sides of pan to seal well. Brush pastry with light cream and sprinkle with sugar. Cut slashes in the pastry to let the steam escape.

Bake for 25 to 30 minutes or until pastry is browned. Serve warm topped with Almond Whipped Cream and almonds. (Serves 6.)


Ingredients for Almond Whipped Cream

  • 2/3 cup Whipping Cream
    2 Tbsp Sugar
    ¼ Tsp Vanilla
    ½ Tsp Almond Extract

Method for Almond Whipped Cream

Combine cream and sugar and beat until beginning to get stiff. Beat in flavorings and continue beating until stiff.
