PEAR-APPLE DEEP DISH PIE Recipe

With fall upon us this Pear-Apple Deep Dish Pie is an ideal dish. We like to use fresh pears as once upon a time we lived in a home that had eleven pear trees so we were always looking for recipes that used pears. When using fresh pears you can substitute the pear juice with apple juice. The rich cream cheese pastry adds to the flavor of this dish.

Ingredients for Pear-Apple Deep Dish Pie

  • 28-oz. can Pear Halves
    2 cups thinly sliced tart Apples
    ½ cup Raisins
    ½ Tsp grated Lemon Rind
    1 Tbsp Lemon Juice
    1/3 cup Sugar
    2 Tbsp Flour
    ½ Tsp Cinnamon
    ¼ Tsp Salt
    Cream Cheese Pastry (recipe follows)
    Pouring Cream

Methods for Pear-Apple Deep Dish Pie

Heat oven to 400 degrees. Have ready an 8-inch square glass baking pan.

Drain pears and measure out ¼ cup of juice. Refrigerate remaining juice to be used in some other way.

Slice pears and combine with sliced apples, raisins, lemon rind and lemon juice. Combine sugar, flour, cinnamon and salt and mix through fruit lightly. Put fruit in baking dish. Drizzle the ¼ cup pear juice over.

Roll pastry slightly larger than the top of the pan and lift very carefully and lay over fruit (pastry is so rich it will tear easily). Turn under edge of pastry and seal well to edge of pan. Cut large slashes in pastry to let steam escape.

Bake 15 minutes at 400 degrees then reduce temperature to 350 degrees and continue baking about 20 minutes more or until pastry is browned and apples are tender.

Spoon into serving dishes while warm and pass the pouring cream. (Serves 6.)

CREAM CHEESE PASTRY

Ingredients for Cream Cheese Pastry

  • ½ cup Butter
    4-oz. pkg. Cream Cheese
    1 ¼ cups sifted All-Purpose Flour
    ¼ Tsp Salt

Method for Cream Cheese Pastry

Blend all ingredients together with a pastry blender. Gather into a ball. Chill for a few minutes if very soft. Roll as directed in recipe for Pear-Apple Deep Dish Pie.
