We love anchovy so the recipe for pasta with garlic-anchovy butter is a favorite in our household. This sauce adds plenty of garlic flavor and a hint of anchovy to any type of pasta. For extra flavor I like to add a generous sprinkling of parmesan cheese to my plate. Serve as a first course for dinner or main dish for lunch.

INGREDIENTS for Pasta with Garlic-Anchovy Butter

  • ½ lb Penne, Ziti, Rotini or Egg Noodles 250 g
  • ¼ cup Butter 50 ML
  • 2 large cloves Garlic, minced 2
  • 1 can (48 g) Anchovy Fillets, undrained and coarsely chopped 1
  • 2 tbsp Hot Water 25 ML
  • 1 cup chopped Fresh Parsley 250 ML

METHOD for Pasta with Garlic-Anchovy Butter

In large pot of boiling water, cook pasta until al dente (tender but firm) or according to package directions; drain and return to pot.

While pasta is cooking, melt butter in small skillet; cook garlic over medium heat until tender. Stir in anchovies plus their oil and water into skillet. Pour anchovy-butter mixture over cooked pasta, sprinkle with parsley and toss. Makes 4 to 6 servings as a first course or luncheon dish.
