Chinese Noodle Soup

Recipe for Chinese Noodle Soup

This flavorful Chinese Noodle soup makes an excellent first course for a dinner party. I like it as it has lots of flavor without being too heavy before the entrée. Chinese mushrooms add a very special flavor; you can substitute regular or shiitake mushrooms although the taste will not be quite the same.

INGREDIENTS for Chinese Noodle Soup

  • 2 large Dried Chinese Mushrooms (or 4 large regular Mushrooms or 1 Fresh Shiitake Mushroom*) 2
  • 6 cups Chicken Stock 1.5 L
  • 1 tbsp Soy Sauce 15 ML
  • 2 drops Tabasco Sauce 2
  • ½ tsp grated Fresh Ginger Root 2 ML
  • ¼ lb thin Chinese Rice Noodles (Vermicelli) 125 g
  • 2 tsp (approx) Sherry 10 ML
  • 2 Green Onions 2

METHOD for Chinese Noodle Soup

Soak Chinese mushrooms in water to cover for 10 minutes or until tender; drain. Remove and discard tough stems. Cut mushrooms into thin strips and set aside.

In saucepan, bring chicken stock, soy sauce, Tabasco and ginger to boil. Rinse noodles in cold water and add to boiling stock; cook for 3 to 4 minutes or until tender. Stir in mushrooms and sherry, adding more to taste. Thinly slice green onions lengthwise, then cut into 1- ½-inch (4 cm) lengths.

Ladle soup into individual bowls; sprinkle with green onions. Makes about 6 servings.

*Available in some supermarkets, fresh fruit and vegetables stores, and Chinese grocery stores.
