METHOD for Scallops in Black Bean Sauce

Pasta with Scallops in Black Bean Sauce [2]Cut scallops in half across the grain. Top and tail snow peas; cut lengthwise into thin strips. Cut red pepper into thin strips. Cut onions lengthwise into strips, then crosswise into 1- ½-inch (4 cm) lengths.

Black Bean Sauce

Wash beans in cold water. In food processor or by hand, chop beans; combine with garlic, vinegar and sugar. Mix cornstarch and water and stir into bean mixture. Process on stir to mix.
In large pot of boiling water (about 12 cups/3 L), cook noodles until al dente or according to package directions. Drain in colander.

Scallops in Black Beans

In large skillet or wok, heat oil; stir-fry snow peas and red pepper over high heat for 1 to 2 minutes. With slotted spoon, transfer to side dish. Add Black Bean Sauce to skillet and bring to boil. Add scallops and cook for 1 minute. Stir in snow peas, red pepper and green onions. Season to taste with soy sauce and pepper.

Arrange hot noodles on warm platter or individual plates. Spoon scallop mixture over noodles. Makes 4 main-course servings, 8 appetizer-sized servings.

*Available in Chinese grocery stores and specialty food shops. The salted black beans, packaged in plastic bags, will keep indefinitely on your shelf.
