Potato Leek RostiMy husband particularly loved this recipe. The men made this Potato Leek Rosti recipe. To get the potatoes to form a uniform cake they used a metal circle form – a cookie cutter with about a 3-inch radius. My husband was astounded at how much excess water is in the potatoes.

INGREDIENTS for Potato Leek Rosti

  • 1 kg.(4) Yukon Gold Potatoes, peeled and grated
  • 50 g Butter
  • 200 g Leek, white part only, well rinsed
  • TT Salt & Freshly Cracked Black Pepper

METHOD for Potato Leek Rosti

Potato Leek RostiSweat leeks with salt and pepper in butter until fragrant and soft. After grating the potatos squeeze them in your hands to remove the excess water in them.
In a clean mixing bowl, add leeks and potatoes, and season to taste.
In a preheated pan, add a small amount of butter, and place potato mixture in, pushing down and smoothing around the sides to form a cake.
Cook over medium/low heat until crispy and brown.
Flip, and continue to cook on other side until brown.
