Ravioli Stuffed with Dungeness Crab Roasted Garlic Cream Sauce

Recipe for Ravioli Stuffed with Dungeness Crab Roasted Garlic Cream Sauce



Ingredients for Ravioli

  • 250 g Flour
  • 3 Pinches Salt
  • 4 Egg Yolks
  • 1 Egg
  • 1 tbsp. Olive Oil
  • 50 ml Water

Method for Ravioli

Ravioli In a food processor beat flour, salt, egg yolks, egg, and olive oil until consistency of cornmeal. Then add water all at once. Blend and turn out on counter. Add lots of flour (we were amazed at how much extra flour was added). Knead for 5 minutes adding the flour as you go. Divide into ¼ or 1/3 of the dough, flatten and place in refrigerator for 20 minutes.

After the crab filling has been made, from refrigerator take out one portion of the ravioli dough at a time. Put it on a floured board and press down with your hands. The amount of flour used during this whole process amazed me. Then feed your dough throw a pasta machine and it will come out as a strip, continue doing this over and over again until the dough is quite thin. All the while putting copious amounts of flour on the pasta machine so the dough will not stick. Do this for all the pieces of dough that you have in the refrigerator. In our experience dividing the dough into quarters rather than thirds was best, otherwise the strips would be either to thick or too long.

Once you have all the strips, take a pastry circle and lightly mark a circle along the length. Using a teaspoon place a portion of the crab filling in each circle. Cover the strip with another strip, then using the pastry circle press down around the filling and cut the circles out. Using a fork you can press the edges down all the way around the circle.

When ready to cook drop the ravioli into boiling water for about 3 minutes. Drain cover with a bit of sauce, sprinkle with pepper and add a bit of parsley. Serve.

Dungeness Crab Filling

Ingredients for Dungeness Crab Filling

  • 100 g Fresh Dungeness Crab
  • 1 Green Onion (sliced)
  • 1 tsp. Red Pepper (finely diced)
  • 1 tsp. Yellow Pepper (finely diced)
  • 2 tsp. Sour Cream
  • 1 tsp. Lemon (zest)
  • Cayenne Pepper (to taste)
  • Salt (if necessary)

Method for Dungeness Crab Filling

Mix all ingredients tighter and set aside until ready to make ravioli.

Roasted Garlic Cream Sauce

Ingredients for Roasted Garlic Cream Sauce

  • 1 Garlic (whole head)
  • 1 Shallot (rough chop)
  • 1 Thyme sprig
  • 1 Bay leaf
  • 250 ml. White Wine
  • 500 ml. Cream
  • Salt & White Pepper (to taste)

Method for Roasted Garlic Cream Sauce

Roast whole garlic in 325 F oven till soft and fragrant.
Meantime simmer wine, shallot, bay and thyme sprig till reduced by 2/3
Add cream and simmer until sauce consistency
Strain, add chopped garlic and season to taste
