Recipe for Spiked Tomato Soup

This Spiked Tomato Soup is perfect for these days of cold winter days. It makes a great starter for a winter meal or as a warm up after a skating or toboggan party. The hot pepper sauce can be adjusted to your own taste. If being served as a warm up it is nice to put the soup in mugs.

INGREDIENTS for Spiked Tomato Soup

  • 2 ½ cups Chicken Stock 625 mL
  • 2 ½ cups Tomato Juice 625 mL
  • ½ cup coarsely chopped 125 mL
  • Fresh Dill
  • ¼ cup Lemon Juice 50 mL
  • ½ tsp Granulated Sugar 2 mL
  • Salt and Pepper
  • Hot Pepper Sauce
  • Dill Sprigs

METHOD for Spiked Tomato Soup

In large saucepan, combine stock, tomato juice, dill, lemon juice and sugar. Slowly bring to boil. Strain to remove dill. Add salt, pepper and hot pepper sauce to taste. Serve garnished with fresh dill sprigs. Makes about 6 servings.
