Everybody loves these Ham Biscuit Rolls with Cheese Sauce. We are real bread lovers in our family and rolls are a special treat. We have include a very basic biscuit roll recipe here but the filling could be used with other biscuit roll recipes. This is a great way to use up leftover ham. Served with a bowl of pea soup it makes a complete meal. Nice for a cold winter’s night.

INGREDIENTS for Ham Biscuit Roll with Cheese Sauce

  • ¼ cup Butter or Margarine
  • ¼ cup All-Purpose Flour
  • 2 cups Milk
  • 1 ½ to 2 cups ground Cooked Ham
  • 1 tablespoon Instant Minced Onion
  • Salt, Pepper, and Powdered Mustard
  • *Biscuit Dough (recipe using 2 cups flour)
  • ¾ cup grated Cheddar Cheese

METHOD for Ham Biscuit Roll with Cheese Sauce

Melt butter and blend in flour. Gradually add milk and cook, stirring, until thickened. Mix ham, onion, ¼ teaspoon each salt and pepper, and ¼ teaspoon powdered mustard. Stir in enough of the first mixture to hold ingredients together. Roll out biscuit dough to form a rectangle about 12 x 10 inches. Spread with ham mixture. Roll up from 10-inch end as for jelly roll. Cut in 1-inch slices and put, cut side down, on greased cookie sheet. Bake in preheated very hot oven (450ºF.) for 15 to 20 minutes. Add cheese to first mixture and heat, stirring, until cheese is melted. Season to taste with salt, pepper, and powdered mustard. Serve on ham biscuits. Makes 6 servings.

Recipe for Biscuit Dough

INGREDIENTS for Biscuit Dough

  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup shortening, butter or margarine
  • ¾ cup milk

METHOD for Biscuit Dough

In a medium bowl, stir the flour, sugar, baking powder and salt until mixed. Cut in the shortening using a pastry blender or fork, until mixture looks like fine crumbs. Stir in the milk until mixture forms a soft dough and leaves the side of the bowl (dough will be soft and sticky).

Lightly sprinkle flour over a cutting board or countertop. Place dough on floured surface; gently roll in the flour to coat. To knead dough, fold dough toward you. With the heels of your hands, lightly push dough away from you with a short rocking motion. Move dough a quarter turn and repeat 10 times. Dough will feel springy and smooth.

On the floured surface, flatten dough evenly, using hands or a rolling pin.
