Recipe for New Potato “Chips”

I discovered this recipe for New Potato “Chips” in the Canadian Living Magazine May 2001. They always have such great recipes in their monthly editions, plus they produce a number of excellent cookbooks.
The New Potato “Chips” have a great taste and add to my repetoire of things to cook on the barbecue. It is always great to cook the whole meal outside.

INGREDIENTS for New Potato “Chips”

  • 4 New Potatoes 4
  • 1 tbsp Vegetable Oil 15mL
  • 1 tbsp Butter, melted 15mL
  • 1 tbsp Cider Vinegar 15mL
  • 1 clove Garlic, minced 1
  • ½ tsp each Salt and Pepper 2mL

METHOD for New Potato “Chips”

Scrub potatoes; cut into ½-inch (1 cm) thick slices. In large bowl, combine oil, butter, vinegar, garlic, salt and pepper; add potatoes and toss gently to coat well.
Reserving butter mixture, place potatoes on greased grill over medium heat; cover and cook, turning and basting frequently with butter mixture, for about 15 minutes or until potatoes are tender and golden brown.
Makes 4 servings.
*You can alter the seasonings to your own taste.
