Joan’s Blueberry Pie

For years I have had a blueberry pie recipe on a scrap of paper that I thought came from my sister-in-law Joan. However when I went to post it on this site I checked with her and I was wrong. This is her version of Blueberry pie. Both recipes are delicious.

1 9″ pie shell, baked & cooled
 
Wash & drain 1 quart blueberries
 

  • Mix 1 cup of berries in a pot with
  • 1 cup sugar
  • 3 tbsps. cornstarch
  • 1/8 tsp. salt
  • 1 cup water

 
Cook & stir over low heat until thick. Add uncooked berries & 1 tbsp. butter
 
Mix well & cool.  Just before serving, pour into pie shell.  Spread over the top 1 cup heavy cream, whipped & sweetened.
