Recipe for Smothered Halibut

Smothered Halibut is a mouth-watering dish. The combination of the halibut, vegetables, and cheese makes this a wonderful meal. It can all be done quickly but appears as if the cook took hours to prepare. Great for family and guests alike.

INGREDIENTS for Smothered Halibut

  • 1 ½ lb. (750 g) Pacific Halibut Steaks
  • 3 tbsp. (45mL) Butter
  • 1 Onion, thinly sliced
  • 1 small Zucchini, cut in julienne strips
  • 2 small Tomatoes, seeded and chopped
  • 1 tbsp. (15mL) chopped fresh Basil
  • ½ tsp. (2mL) Salt
  • 2 tbsp. (25mL) grated Parmesan Cheese

METHOD for Smothered Halibut

Arrange halibut in greased shallow baking dish just large enough to hold fish in single layer. Melt butter in small saucepan; sauté onions just until soft, separating into rings as they cook. Remove onion rings with slotted spoon and spread over halibut. Stir-fry zucchini in same saucepan until slightly soft. Spoon over onions. Toss tomatoes with basil and salt; spoon over zucchini. Sprinkle with Parmesan cheese. Cover loosely with foil and bake at 450°F (230°C) for 10 min. per inch (2.5 cm) thickness of thickest steak or until fish flakes when fork-tested. With slotted lifter, remove vegetable-topped halibut steaks to serving plates. Serve immediately. Serves 4.
