Saucy Cod with Artichokes

Recipe for Saucy Cod with Artichokes

Saucy Cod with Artichokes is a great meal for those cool dreary days when you need some comfort food. It is not quite a soup but should be served in a bowl. It is nice with some fresh bread, and green vegetables. You can use a different fish but cod is usually very available.

INGREDIENTS for Saucy Cod with Artichokes

  • 1 tbsp. (15mL) Butter or Margarine
  • 1 ½ cups (375mL) thickly sliced Mushrooms
  • 1 clove Garlic, minced
  • â…“ cup(75mL) Tomato Juice
  • 3 medium Tomatoes, seeded and cut into chunks
  • ½ tsp. (2mL) Basil
  • pinch Thyme
  • 1 lb. (500 g) Pacific Cod Fillets*, cut into serving portions
  • 1 can (14 oz./398mL) Artichoke Hearts, drained and halved
  • Salt and Pepper
  • pinch Sugar (optional)

METHOD for Saucy Cod with Artichokes

In heavy saucepan, melt butter, add mushrooms and garlic; sauté until mushrooms are tender. Add tomato juice, tomatoes, basil and thyme; bring to simmer. Add cod and artichokes; cover and simmer for 5 min. Remove cover and continue cooking another 5 min. or until fish is opaque and flakes when fork-tested. Season to taste with salt and pepper and, if tomatoes are very acidic, a pinch of sugar. Serve in shallow bowls. Serves 4.
*substitute Pacific Snapper of Perch if desired
