Baked Dilly Cod Fillets

This recipe comes from the Fisheries Association of BC. They have this to say about cod -“firm fleshed and fine flavored. High in good quality, protein, and low in fat.”

  • 1 pound Fresh or Frozen Cod fillets
  • ½ cup Sour Cream
  • 2 Tsp prepared Mustard
  • 2 Tsp Onion, chopped finely
  • 2 Tsp Dill Weed
  • 3 Tbsp Mayonnaise
  • Salt and Pepper
  • 2 Tbsp Parmesan cheese, grated
  • ¼ cup Cheddar cheese, grated
  • Dash Paprika
  • Lemon wedges

Partially thaw fillets if frozen. Preheat oven to 450 degrees. Arrange cod in greased baking dish. Combine sour cream, mustard, onion, dill weed, and mayonnaise. Season with salt and pepper. Spread mixture over fish.

Bake for 10 – 15 minutes per inch of thickness.

Sprinkle with Parmesan and cheddar cheese, dash of paprika, and broil for 1 minute until cheese is bubbly and flecked with brown.

Serves 4. Serve with lemon wedges, broiled tomatoes, and green beans.
