Salmon Steaks with Sour Cream

Cooking Salmon Steaks with Sour Cream keeps the salmon very moist. We frequently use sour cream with some combination of spices to cook salmon and other fish. The recipe for Salmon Steaks with Sour Cream instructs to bake then broil but as we do not broil in our house, it can all be prepared on the barbecue. After covering the salmon with sour cream wrap it in foil the barbecue it for 8 to 10 minutes. Unwrap and finish on grill until it just flakes.

INGREDIENTS for Salmon Steaks with Sour Cream

  • ½ cup (125mL) Sour Cream
  • 2 tbsp. (25mL) Butter of Margarine
  • 2 tsp. (10mL) minced Onion
  • ½ tsp. (2mL) Tarragon
  • Salt and Pepper
  • 4 Pacific Salmon Steaks, cut approx. 1 inch (2.5 cm) thick

METHOD for Salmon Steaks with Sour Cream

In a small bowl, combine sour cream, butter, onion, tarragon, salt and pepper to taste. Mix well. Sprinkle salmon lightly with additional salt and pepper. Place salmon in single layer in buttered, shallow baking dish. Spread sour cream mixture over fish. Bake at 450°F (230°C). for 8 min., then broil 2-4 min. until sauce is bubbly and brown and fish flakes when fork-tested. Serve immediately. Serves 4.
