Recipe for Peppery Halibut Broil

Halibut is such a delicious fish. This recipe for Peppery Halibut Broil gives a bit of zip to the flavor. We don’t broil in our house, as our barbecue is accessible all year round. So instead of broiling we barbecue the halibut. The cooking times are the same.

INGREDIENTS for Peppery Halibut Broil

  • 1 ½ lb. (750 g) Pacific Halibut Steaks, cut approx. 1 inch (2.5 cm) thick
  • Salt and Pepper
  • â…“ cup (75mL) Oil
  • â…“ cup (75mL) Lemon Juice
  • 3 drops Hot Red Pepper Sauce
  • Paprika
  • 8 Bay Leaves

METHOD for Peppery Halibut Broil

Season halibut lightly with salt and pepper. Place in shallow baking dish. Combine oil, lemon juice, and hot red pepper sauce. Pour over halibut. Cover; marinate 3 hours, turning at least once. Remove halibut to well-oiled broiler rack, reserving marinade. Sprinkle steaks with paprika. Top with bay leaves. Broil 4 inches (10 cm) from source of heat for 5 min. Remove bay leaves, turn halibut, brush with remaining marinade, sprinkle with paprika, and replace bay leaves. Broil 5 min. more or until fish flakes when fork-tested. Discard bay leaves. Serve immediately. Serves 4.
